Don't be intimidated by the chicken! They are so easy to cook. Preheat the oven to 180C. Rub chicken with olive oil, salt, pepper, thyme and spices of your choosing. Insert a half a lemon into the cavity of the chook. Roast breast side down for 30 minutes, then flip the chook over onto it’s back and roast for another 30 minutes. Remove from the oven, cover in foil and leave to rest for 20 minutes.
